Ingredients and spices that need to be Take to make Sindhi Biryani:

  1. 1-1/2 kg Chicken
  2. 2 tbspn vinegar
  3. 1 kg basmati rice (soaked in water for at least 1/2 an hour)
  4. 1/2 kg potatoes (cut into large chunks)
  5. 1-1/2 Cups oil or as required
  6. 4 Onions (sliced)
  7. 2 tsp garlic paste
  8. 2 tsp ginger paste
  9. 4 tomatoes (chopped)
  10. 10-15 Prune (Aaloobukharay)
  11. 2 tsp Salt or to taste
  12. 2 tsp red chili powder
  13. 2 tsp red chilli flakes
  14. 1/2 tsp turmeric powder
  15. 1/2 tsp garam masala powder
  16. 10 cloves (Laung)
  17. 6 green cardamoms
  18. 10 piece black pepper
  19. 1 tbspn crushed Cumin
  20. 1 tbspn crushed coriander
  21. 2 Cinnamon sticks
  22. 2 black Cardamom pods
  23. 2 bay leaves
  24. 1-1/2 Cups Yogurt
  25. 6 green chilies
  26. 1 tbspn lemon juice
  27. 1/2 Cup fresh coriander leaves
  28. 1/2 Cup mint leaves
  29. 4 tsp salt or to taste
  30. 2 Star anise (badiyan ka phool)
  31. Orange food coloring as required
  32. 1 tbspn Julienne cut ginger
  33. 2 tomatoes sliced
  34. 3 tbspn mint leaves
  35. Coal for smoke (optional)
  36. Few drops Biryani essence optional

Instructions to make to make Sindhi Biryani

  1. Chicken ko ache se wash kar ke vinegar laga ke basket mein rakh dain.
  2. Ab yogurt mein,red chilli powder, red chilli flakes, crushed cumin, salt, turmeric powder, garam masala powder, crushed coriander, ginger n garlic paste, 3 green chillies paste, lemon juice, pinch of yellow food colour mix kar ke chicken ko marinade kar ke half hour ke liye rakh dain.(Mene Raat mein hi marinade kar dia tha).
  3. Slice the onion and fry it in oil until it is golden brown. Take out 1/2 of it and keep aside.
  4. In remaining fried onions add marinated chicken, chopped tomatoes, prunes (Aaloobukharay), cloves, green cardamoms, Black Pepper, cinnamon sticks, black cardamom pods and bay leaves and cook well.
  5. Cook this until the tomatoes are tender and the water is dry.
  6. On other side boil the water add 1 tsp yellow food colour and boil potatoes until half done.
  7. Now fry potatoes until light golden,take them out set a side. potatoes should be 80% done.
  8. Now add chopped coriander, mints and the potatoes to the chicken. Simmer for 2, 3 minutes. Your chicken curry is done.
  9. Coal ko stove per solga kar steel bowl mein rakh ke chicken mein coal wala bowl rakh ke 2-3 drops oil dal ke cover kar ke rakh dain 5 minutes take achy se smokey ho jye.
  10. Boil the rice with salt, star anise,few drops vinegar and drain the water off when the rice is half done.
  11. Layer the curry with the rice in a pot in one on one layers and tomato slices, Julienne cut ginger coriander leaves.
  12. Sprinkle the food color, fried onions, and chopped coriander, mint leaves, green chilli slices, Julienne ginger, few drops Biryani essence on top of the last layer.
  13. Close the lid tightly making sure no steam passes out of the pot and cook on low heat until the rice is done. Switch off the gas and let the biryani stay covered for another 15 minutes..
  14. Gently mix it before serving.
  15. Serve hot with raita and salad enjoy 😋
