  17. 6 Shallots
  18. 7 cloves Garlic
  19. 1 pieces Chopped ginger
  20. 4 Green chilli
  21. leaves Coriander
  22. As needed Mint
  23. 1 Cinnamon
  24. 4 Cardamom
  25. 1-2 Cloves
  26. 1 Maze
  27. 1 Nutmeg
  28. as required Ghee

Instructions to make to make Kushka /plain Biryani

  1. Soak the basmati rice for about 30 minute
  2. Heat some ghee in a pan and add a piece of cinnamon, cloves, cardamom,maze and nutmeg powder, shallots, garlic, ginger paste and green chilies
  3. Saute this for about 2 minutes and add coriander leaves and mint leaves and cook this for about 10 minutes
  4. Let the mixture cool down and grind it to a fine paste
  5. In a pressure cooker, add some ghee bay leaf,star anise, clove, cardamom, stone flower and onions
  6. Saute the onion till they are golden brown in colour
  7. Add chopped tomatoes, turmeric powder,chili powder, salt and coriander powder and saute them
  8. Add the ground masala paste, and cook them until the raw smell goes away
  9. Add curd and mix well
  10. Add the soaked rice into the pressure cooker and add water
  11. Cook the Biryani on a medium flame for about 2 whistles
  12. Let the pressure subside and garnish the khuska with some freshly chopped coriander leaves
  13. Serve the khuska hot with some raita by the side
