- 3 cups wheat flour

- Oil for deep frying
- For Batata rassa (potato curry)
- 5 medium sized potatoes
- 2 medium size onions
- 2 medium size tomatoes
- 8/10 curry leaves
- 5/6 garlic cloves
- 1 inch ginger
- 2 tbsp dry grated coconut
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- Pinch asafoetida
- 1 tsp red chilli powder
- 1 tsp homemade kala masala
- 1 tsp homemade kanda lasun masala (onion garlic masala)
- 2 tbsp oil
- Salt as per taste
- Water as required
- For Masalabhat
- 21/2 cups Basmati rice
- 1 small cup fresh green peas
- 10/12 curry leaves
- 1/4 cup cashews
- 1 big tomato cut into lengthwise
- 5/6 garlic cloves
- 1 inch ginger
- 2 tbsp dry grated coconut
- 1 tsp red chilli powder
- 1 tsp homemade kala masala
- 1 tsp dhanya jeera powder
- 1/4 tsp garam masala
- 3 tbsp oil
- Salt as per taste
- 1 tsp sugar
- 6 cup boiled water
- For Koshimbir
- 1 small cup finely chopped onion
- 1 small cup finely chopped tomatoes
- 1 small cup finely chopped cucumbers
- 1/2 small cup roasted crushed peanuts
- 2 green chillies finely chopped
- 1 tsp sugar
- Salt as per taste
- Shrikhand
- 150 gms chakka (yoghurt)
- 150 gms sugar
- 1 tsp cardamom powder
- 1 tsp dry fruits powder
Steps to make to make Puri, batata rassa, Masalebhat, shrikhand & Koshimbir
- For puri
- Heat 2 tbsp oil in tadka pan.

- In a large mixing bowl add wheat flour, salt & hot oil, mix well.

- Add little water and knead the dough.
- The dough should not be soft but a little tight

- Divide the dough into small size balls

- Roll the dough ball evenly into circle using rolling pin

- Heat oil in a kadhai & deep fry one by one.

- For Batata rassa (potato curry)
- Rinse, peeled & chopped potatoes into small cubes.
- Grind garlic, ginger & dry coconut to a smooth paste.

- Heat 2 tbsp oil in a pan, add mustard seeds, let them crackle.
- Add cumin seeds, let them crackle.
- Add curry leaves, chopped onion. Saute until turns trasculent.

- Add chopped tomatoes & saute till the tomatoes soften.
- Add asafoetida, turmeric powder, chopped potatoes.

- Cover the pan with lid cook until potatoes are half cooked

- Add ginger garlic coconut paste, all masales & salt. mix well.
- Add water as per consistency of gravy & boil it on sim till it cooks well.

- For Masalebhat
- Clean and wash the rice, drain and keep aside
- Wash green peas also & keep aside

- In a mixer grind ginger garlic & coconut to a smooth paste.
- Heat oil in a pan, add mustard seeds, let them crackle.
- Add asafoetida, turmeric powder, curry leaves & green peas and mix well.

- Cover the pan with lid and cook until the peas soften.
- Add rice, all masales, salt and mix until the rice is well coated.

- Add 6 cups of boiled water.
- Add tomatoes, cashews & sugar.

- Cover the pan with lid & cook until rice is done.
- For Koshimbir
- In a large mixing bowl combine all ingredients together and mix well.
